No, not “Sundae” but Sunday!! The seventh day of the week (for me at least) and it’s the day of rest, thank goodness! Hopefully, if you’ve been following along you’ve been a little bit sore and tired (that means it’s working, so today we feast!) Although it may not seem as great as a chocolate chip cookie a banana actually has a fair amount of sugar but it also has great nutrients in it, so love your bananas.
Everytime I hear the word banana I think of banana pancakes the jack johnson song, give it a listen:
So soothing right!!?! And you know what…I have a few recipes for you today:
Banana Pancakes: (this is a miracle!)
- 1 mashed banana
- 2 eggs or just eggs
Mix the two ingredients until blended and voila! Cook your batter like a normal pancake. Careful they are a bit harder to flip so spray the pan…no butter, use PAM or coconut oil.
Banana Crepes: (not gonna lie…i struggled with these)
- 1/2 mashed banana
- 1 tsp cinnamon
- 1/4 cup almond milk
- 1/3 cup of oats
- 2 egg whites or 1 whole egg
Blend the oats and cinnamon then add the egg, banana, and milk and there you go! Another easy batter. My issue with this recipes was actually making it look like a crepe…I could never flip it so I ended up just cooking the batter kind of like scrambled eggs and putting it on plain greek yogurt with strawberries.
Banana Ice Cream!!
- frozen chopped up banana
Blend in food processor until it’s the right consistency and you’ll have creamy banana ice cream, you can add almond butter or nuts to add flavor and crunch!
- 1 banana
- 1/2 cup of oats
- dried fruit of choice (I like craisins)
Mash the banana and mix in oats and dried fruit, then form into cookie balls, no baking it’s that simple! And so yummy too.
- 2 TB almond butter
- 1/2 medium Banana
- 1 serving vanilla whey protein powder
- 1/2 cup almond milk
Blend well and you’ll have a delicious smoothie!
Although these all sound delicious…and I assure you they are, bananas, however good for you, are high in natural sugar so pick three recipes max! The smoothie, pancakes, and crepes are all supposed to be meals so keep that in mind 🙂
